Mother’s Day Special Brunch Recipe

Mother’s Day is just around the corner, and what better way to celebrate the special women in your life than with a delicious brunch? This year, skip the crowded restaurants and make Mom a homemade brunch with this easy and delicious recipe.

Quiche Lorraine with Spinach and Feta

Ingredients:

1 pre-made pie crust 6 large eggs 1 cup heavy cream 1/2 tsp salt 1/4 tsp black pepper 1/2 cup cooked spinach, chopped 1/2 cup crumbled feta cheese 6 slices of bacon, cooked and crumbled 1/4 cup chopped green onions

Instructions:

  1. Preheat the oven to 375°F.
  2. Unroll the pie crust and place it in a 9-inch pie dish. Trim the edges and prick the bottom with a fork.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  4. Stir in the spinach, feta cheese, bacon, and green onions.
  5. Pour the mixture into the prepared pie crust.
  6. Bake for 35-40 minutes, or until the quiche is set and the crust is golden brown.
  7. Remove from the oven and let cool for 5 minutes before slicing and serving.
